You can set the palette size yourself anywhere from 2 to 256 colours, or leave it empty and let your chosen level pick 256, 128, or 64.
Which level to choose
Fast, Recommended, and Smallest control how hard the encoder works on the PNG. Recommended is the default and is the right answer for almost everything. Fast is worth it when you are converting a large batch and want it back quickly. Smallest spends more time squeezing the file down and is worth the wait when the PNG is going somewhere size-sensitive.
Colours that stay the way you shot them
The colour profile embedded in your JPG is kept by default rather than stripped, so a photo shot in a wide colour space does not come back looking flat or oversaturated.
